Miso salmon with Asian slaw

Ingredients

2 salmon fillets

Dressing for salmon
2 tbsp miso paste
2 tbsp balsamic vinegar
2 tbsp soy sauce
2 tbsp rapeseed oil
1 tsp smoked paprika
1 tsp brown sugar

Asian slaw

Mixed shredded vegetables
Peppers
Red cabbage
Chinese cabbage
Spring onions
Carrots

Slaw dressing

2 tbsp olive oil
2 tbsp sesame oil
2 tbsp soy sauce
2 tbsp honey
2 tbsp lime juice
1 clove of garlic
1 thumb of ginger
1/4 tsp chilli flakes

Packet of Buckwheat soba noodles
Black sesame seeds




  1. Make paste for salmon, cook noodles to instructions on packet, chop and shred veg.
  2. Make dressing for veg and add to drained noodles and veg, mix well. 
  3. Cover salmon fillet with paste and bake under grill for 6-8 mins. 
  4. Serve with black sesame seeds and optional boiled egg.
